Hello Beautiful Souls!
I woke up to a bunch of brown bananas and I didn't want to waste them so I attempted to make some healthy vegan banana bread muffins!
I found a simple recipe online and then "Kat-ified it" to make it suit my dietary needs!
I urge you to do the same to make it perfect for you!
Ok so let me just say these are small muffins and they do stick a little to the sides of the baking cups, but overall I am very happy with them! They are moist and delicious!
Ok lets' get to it, here are the yummy details!
Servings: 12 servings
Prep Time: 7 mins Cook Time: 25-30 mins
Ingredients
3/4 cups of flour. I used Bob's Red Mill Gluten Free All Purpose Baking Flour
1/2 cup of gluten free oats
1/2 teaspoon salt
1 1/2 teaspoons of aluminum free baking soda
1/2 cup of organic applesauce
3 mashed bananas (the riper the better)
*optional add 1/2 cup or more of maple syrup, honey, coconut sugar to sweeten
*optional add a teaspoon of organic vanilla
Instructions
Preheat oven to 350
In a large bowl, whisk together the flour, oats, baking soda and salt
Mash bananas and blend with applesauce and sweetner
Combine wet and dry ingredients in a large bowl
Put 12 baking cups into muffin tray (I use If You Care Mini Baking Cups)
Evenly distribute the batter into the cups (a little over 1/3 a cup)
Bake for 25-30 minutes and then let cool
*After I baked these, I served them by cutting them in half and as a butter alternative I put a tiny bit of coconut oil with a pinch of himalayan salt. I also added a small spread of organic wild blueberry jam for extra sweetness ~ mmm what a treat!
