Scrumptious Gluten Free Granola


About 5 years ago hubby & I took an adventurous 3 week road trip out west and we ended up in the magical land of Taos New Mexico! A series of synchronistic events led us to this beautiful bed and breakfast where their homemade granola was magically delicious! It was really that good!

I wish I could take some credit for this, but it all goes to my cute hubby Joshua! He was on a mission to make some gluten free granola that was parallel to the one we had in Taos, and I think he succeeded!

Scrumptious Gluten Free Granola Recipe

Ingredients:

4 cups of gluten-free oats

1/4 cup of organic extra virgin coconut oil

1/2 cup of organic maple syrup

1 organic apple

1 teaspoon organic cinnamon

1/2 teaspoon Himalayan sea salt

1 cup of organic raisins

1 cup of organic dried wild blueberries (or dried cranberries)

1 cup of crushed organic almonds (or walnuts)

1 cup of shredded organic coconut

Directions:

*Heat the coconut oil until melted, then add the maple syrup.

*Add the cinnamon and salt to the oats and stir.

*Then mix the liquid (coconut oil and maple syrup) to the dry ingredients (cinnamon, salt and oats) in a bowl.

*Dice the apple into small pieces, and add to the mixture.

*Then spread it out onto parchment paper on a baking sheet.

*Bake at 350 degrees for 21 minutes, flipping the granola at the halfway point. Let cool.

*While half the ingredients are in the oven baking, mix together the raisins, dried wild blueberries, almonds and shredded coconut and set aside.

*Once the granola is done baking and has cooled add in the raisins, dried wild blueberries, almonds and shredded coconut mixture and Wallah - you have DELICIOUS, homemade granola!

*Eat it by the handful, or enjoy with coconut milk, or your favorite non-dairy milk!
